I find it hard to imagine that some people aren’t ‘breakfast people’; how could anyone deny themselves the opportunity for a meal?! And breakfast of all meals; with offerings of… fruit, toast, eggs, PANCAKES!! And the humble bowl of porridge!! I know I have posted a porridge recipe before but I truly love the goodness, yumminess and simplicity of the nutritious and convenient oat. Wonderful friends who stayed recently left us with a box of oats and the most perfect looking plum; so there was nothing else for it!! Sweet plum porridge with maple syrup. Plum Porridge w/ Maple Syrup
Preparation Time: 3mins // Serves 1
- ½ cup rolled oats
- 1 cup rice milk (or non-dairy milk of your choice0
- 1 fresh juicy plum
- 1-2 tbs maple syrup
- extra rice milk to serve
Add the oats and rice milk to a small saucepan. Slowly bring to the boil. Simmer, stirring frequently for 2 minutes, remove from heat.
Add the maple syrup and mix through.
Serve in a warm bowl topped with sliced plum, extra rice milk and a little drizzle of extra maple syrup. Perfect!!
