The past couple of days it has turned cold and snowy again here in the South Island of New Zealand; the perfect porridge weather. And thinking of you all in the Northern hemisphere, as fall begins to knock at your door, I couldn’t help but share one of my favourite porridge recipes.
I first ate porridge served this way at Vivace Espresso Bar, a cute little café tucked away in the side streets of Christchurch. Here I have made it with green apple for a beautiful tang of flavour and prepared the porridge using rice milk for a deliciously vegan breakfast full of the goodness of oats, fresh fruit and nuts.
Topped with dry roasted almonds and a little sprinkle of brown sugar this simple bowl of healthy and scrumptious porridge is a beautiful way to start your day, especially on a cold, grey and rainy morning like it was here at home. The porridge recipe can be easily adapted to feed the whole family, simply adjust the amounts per number of people to serve and enjoy!
Green Apple & Almond Porridge
Preparation time: 5 mins // Serves 1
- 1/3 cup traditional oats
- 1 cup rice or oat milk
- 1 small green apple
- lemon juice, just a squeeze
- freshly grated cinnamon, a dash
- dry roasted almonds, small handful
- brown sugar, a sprinkle
- fresh mint
Grate the apple and add to a serving bowl, squeeze over a little lemon juice and grate a little fresh cinnamon on top.
Place the oats and milk into a small saucepan, bring to a gentle simmer and allow to cook for 2 minutes, stirring.
Once the porridge is cooked spoon over the prepared apple, top with dry roasted almonds, a sprinkle of brown sugar and a little pour of extra rice milk, garnish with a little mint and serve immediately.
