Apple Blueberry Porridge w/ Chia & Maple Syrup

Long time followers of Veggie num num would be well aware of my love affair with porridge. I have, over time, shared a number of porridge recipes. Still I see that as absolutely no reason not to share another.

Porridge really is a wonderful way to start the day. Reputed to be both cancer and heart disease fighting, oats are also loaded with lots of necessary vitamins and they give us a great boost of slow release energy, perfect for a morning meal.

This little healthy breakfast recipe is something I have been making for the past week and decided it was really just too tasty not to share. Apple finely grated to a pulp is cooked in the oats to lend a natural sweetness without the need of added sugars.

For this vegan apple blueberry porridge I used rice milk that has a natural sweetness also but try using whatever milk you prefer. The Blueberries are a little indulgent and add that beautiful tangy sweetness. At this time of the year it means frozen blueberries for us but they are still pretty good!!

A healthy and quick to prepare breakfast that will keep you feeling warm and full of goodness right through till lunch time. A great recipe for kids and adults alike, add a little maple syrup for added sweetness if you desire.

Apple Blueberry Porridge w/ Chia Seeds & Maple Syrup

Preparation time: 15mins // Serves 1-2

  • 1/3 cup rolled oats
  • 1 cup non-dairy or dairy milk (I use rice milk)
  • ½ cup water
  • tinny pinch of salt
  • 1 tbs white chia seeds
  • 1 large apple, finely grated to a pulp (I used a zester)
  • a handful of blueberries (fresh or frozen)
  • maple syrup to serve

Add the oats, milk, water, chia seeds and salt to a small pot with ¾ of the apple pulp.

Bring to a simmer and allow to gently bubble for 1 minute while constantly stirring. Add the handful of blueberries towards the end and stir through.

Transfer the cooked oats to a warm bowl, spoon on top the remaining apple pulp, dot a few extra blueberries around and drizzle with maple syrup or a sprinkle of brown sugar if you desire.

Enjoy as the perfect healthy wintertime breakfast, yum!!

    Looks yummy! The apple and blueberries sound like a great combo, I don’t think I’ve ever done that before. Looks so comforting for cold mornings 😀 We’re almost in the hottest part of our summer but already I can’t wait for cold morning to eat things like this, I love oatmeal!

    It looks gorgeous! I love porridge as well. Sometimes even for a snack.
    I also make mine with grated apple and rice milk and definitely don’t find a need to add sugar. It’s beautifully sweet already.

    Your porridge looks so warm and comforting! I love the idea of the grated apple to add natural sweetness. I usually use honey, but will have to try your version.

    I love starting my day with a warm cereal! Porridge seems to keep me full for hours, so if I know I’m not going to have access to much food in the day, I whip up a bowl of tasty oats.
    The first picture of your post is SO beautiful! I go haywire with the toppings, but I never place them so perfectly. Really nicely done :)

    I had this for lunch today – omgoodness what a beautiful filling meal it was. I used black chia seeds and raspberries intead of the white chia and blueberries and it was beautiful. Even my daughter who claims she doesn’t like porridge was impressed. Thanks for the ideas.

    We’ve been enjoying this recipe so much that it has become a staple breakfast 2 or 3 times a week. I prefer steel cut oats for my porridge, but leaving the oats, chia seeds, milk and water to soak overnight in the pot means that breakfast is still ready in under 5 minutes.
